Directions for Gravy

Mix mother’s kitchen spice mix @ Tbs spoon (30 gms) with 20 ml oil ,300 ml water and  to make a fine paste mix well .Marinate Mutton or chicken or veggies ( 300 gms ) with the prepared paste and  keep aside it for 10-15 min. Add salt if required. With little oil sauté the prepared mixture in a pan ,on a medium heat. Add 300 ml water, Cook till soft and tender. ( Mutton will take time to cook ) ( for mutton use presser cooker )

Directions for grill

Mix mother’s kitchen spice mix @ Tbs spoon (30 gms) with 250 ml of water and  to make a fine paste mix well .Marinate Mutton or chicken or veggies ( 300 gms ) with the prepared paste and  keep overnight for meat . Add salt if required. Cook it in a pan  With little oil till it becomes dry ,soft and tender. ( for Mutton cook it separate and then add to the mix while sauté the spice though it will take more time to cook )

Best way to make Chettinad Roast is with the  chicken on coal grill , you can marinate the while chicken with chettinad spice paste as directed ,cover it with banana leaf ,tie with the toing and cook it on the coal on ground ,one of the ancient ways of cooking . you will like it.
