Kadhai Khada Masala

Directions for Gravy

Mix mother’s kitchen spice mix @ Tbs spoon (30 gms) with 20 ml oil ,300 ml of water and  mix well .Marinate Mutton or chicken or veggies ( 300 gms ) with the ginger garlic paste (10 gm) ) along with the spice mix and  keep aside it for 10-15 min. Add salt if required. With little oil sauté the prepared mixture in a pan on a medium heat. Add 300 ml water Cook till soft and tender. ( Mutton will take time to cook ) ( for mutton use presser cooker ) Add 1 Tbs of butter ,Garnish with fresh coriander, serve.

Directions for Grill

Mix mother’s kitchen spice mix @ Tbs spoon (30 gms) with 50 ml oil ,100 ml of water and  mix well .Marinate Mutton or chicken or veggies ( 300 gms ) with the ginger garlic paste (10 gm) ) along with the spice mix and  keep aside it for 10-15 min. ( If you marinate overnight for meat it will taste fabulous  )Add salt if required. Cook it on a grill With little oil on a medium heat. Cook till soft and tender. ( Mutton will take time to cook )

Best way to use this spice to make paneer or chicken kadhai , is delicious.

You can batter fry the  chicken cubs ,cauliflower , and tossed in the kadhai masala with chopped onion and tomato this is a very good variant to have it in you snacky menu list.
